Beef & Coconut Mango Curry
Ingredients:
- 1tsp Thai red curry paste
- 3 tbsp plain flour
- 500ml beef stock
- 1 mango (peeled & diced)
- 100ml oil
- 500 gm boneless Beef / Short Ribs, cut into cubes
- 1 cans of full fat Coconut Milk
- 1 stalks Lemongrass, crushed
- 1tsp.brown Sugar or to taste
- 2tsps. Salt or to taste
- 2 Lime Leaves, roughly chopped
Spice Paste:
- 150g Shallots
- 100g Galangal, sliced
- 30g Ginger, sliced
- 30g fresh Turmeric root, sliced
- 40g dried Red Chillies, seeded and soaked
- 40g Garlic
Method:
- Blend the spice paste ingredients finely
- In a mixing bowl put in the beef and plain flour , mixed and coated the beef together well.
- In a pan, Add in the oil, fry in the well coated beef slowly and seared until nicely coloured.
- Add the spice paste and stir for about 5 – 10 minutes
- Add in the Thai red curry paste to the beef & spice mix and bind well with the beef stock and crushed lemongrass.
- Cook over a medium heat for one and a half hours, add in the mango & coconut milk.
- stirring occasionally until the sauce is thick and the beef tender.
- Season to taste with sugar and salt. Add the lime leaves.
- Lower the heat and cook, stirring continuously, until the curry is reduced and a film of oil appears.
- Serve with Jasmine rice
