Beef & Coconut Mango Curry

Beef & Coconut Mango Curry

Ingredients:

  • 1tsp Thai red curry paste 
  • 3 tbsp plain flour
  • 500ml beef stock
  • 1 mango (peeled & diced)
  • 100ml oil
  • 500 gm  boneless Beef / Short Ribs, cut into cubes
  • 1 cans of full fat Coconut Milk
  • 1 stalks Lemongrass, crushed
  • 1tsp.brown Sugar or to taste
  • 2tsps. Salt or to taste
  • 2 Lime Leaves, roughly chopped

Spice Paste:

  • 150g Shallots
  • 100g Galangal, sliced
  • 30g Ginger, sliced
  • 30g fresh Turmeric root, sliced
  • 40g dried Red Chillies, seeded and soaked
  • 40g Garlic

Method:

  1. Blend the spice paste ingredients finely
  2. In a mixing bowl put in the beef and plain flour , mixed and coated the beef together well.
  3. In a pan, Add in the oil, fry in the well coated beef slowly and seared until nicely coloured.
  4. Add the spice paste and stir for about 5 – 10 minutes
  5. Add in the Thai red curry paste to the beef & spice mix and bind well with the beef stock and crushed lemongrass. 
  6. Cook over a medium heat for one and a half hours, add in the mango & coconut milk.
  7. stirring occasionally until the sauce is thick and the beef tender.
  8. Season to taste with sugar and salt. Add the lime leaves. 
  9. Lower the heat and cook, stirring continuously, until the curry is reduced and a film of oil appears.
  10. Serve with Jasmine rice
