Back to School Cookies
Time to get back to a routine and lunch boxes are here again, a great way to turn simple ingredients and overripe fruits into delicious cookies for your kids lunchbox

Method
1. Preheat the oven to180C and line two baking trays with baking parchment.
2. Place the hazelnuts onto a baking sheet and roast for 4 minutes, then add to a blender and pulse into a flour like texture
3. In a bowl, mash the bananas, then add the oats, hazelnuts, cinnamon, and a pinch of salt to create a dough. Gently stir through the berries, careful not to break them up. Scoop up tbsps. of the mixture and roll them into balls. Place them on the prepared baking trays and flatten them with your hand.
4. Bake for 15 mins until they are golden brown. Allow to cool on a rack and then store in an airtight container for three days.
