Phad See Ew (Thai Style Fried Noodle)

Phad See Ew (Thai Style Fried Noodle)

Ingredients
• 200g medium flat rice noodles
• 2½-3tbsp sunflower/ rapeseed oil
• 1 tsp soy sauce
• 250gm chicken thighs (thinly sliced)
• 2 garlic cloves, thinly sliced
• 2 Fresh chilli sliced
• 100g beansprouts
• handful of broccoli stems 
• 3 spring onions, finely chopped
• sesame seed to serve
• ?1 egg
 
For the sauce mix
 
• 2 tbsp tamarind paste
• 3 tbsp dark Soy Sauce)
• 2 tbsp Thai fish sauce
• 2 tsp honey
• 1tbsp Chinese 5 spice
• 1-2 tbsp lime juice
• 2 tbsp sweet chili sauce
 
Method
1. Soak the noodles first so you can stir-fry everything quickly at the end. To do this put the noodles in a large bowl and pour over boiling water and cover. Leave to soften for 10 minutes. 
2. Drain and rinse in cold water, then toss with 1 tsp of the oil so  they won’t stick.
3. Meanwhile, mix together all the sauce ingredients in a medium bowl. Mix well.
4. Add oil to the wok and fry the garlic, Chili and chicken for 1-2 minutes until fragrant & cooked.Then pour in the sauce and bring to boil.
6. Add the noodles, and mix well until they are coated. Throw in the spring onions, broccoli , beansprouts toss through the noodles. Squeeze the lime juice into the noodles. 
7. Crack the egg into the noodle mixture and mix. 
8. Finally toss all together before transferring to a Bowl.
9. Sprinkle with sesame seed to serve
