Four Cheese Ravioli with Marinara sauce

Four Cheese Ravioli with Marinara sauce

Serves: 2 

Time: 7 minutes 

 

Ingredients: 

1 x 300g packs of Ottimo Fantastico Four Cheese Ravioli 

A good glug of extra virgin olive oil 

1 large red onion diced  

3 garlic cloves minced 

130g diced unsmoked pancetta 

A squeeze of tomato puree  

A pinch of sugar   

1 400g tin plum tomatoes 

1 teaspoon of dried oregano 

Torn fresh basil leaves  

100ml fresh double cream  

salt and pepper to taste 

 

To serve:  

Extra torn fresh basil  

An extra sprinkle of parmesan  

Dried chili flakes  

Sliced black olives  

 

Method: 

  1. Place a medium sized pan on the hob over a medium heat. 
  1. Drizzle over a good glug of extra virgin olive oil. 
  1. Add your onion and garlic and sizzle for a minute. 
  1. Stir in your pancetta and turn your pan to a low heat. 
  1. Meanwhile in another saucepan add your Ottimo Four Cheese Ravioli to boiling water. 
  1. Return to boil and simmer for 4 minutes.  
  1. Squeeze your tomato puree into the pan with the onion, garlic and pancetta and add a pinch of sugar, this will offset the acidity in your tomato. 
  1. Pour over your plum tomatoes and add a sprinkle of dried oregano, a splash of cream and simmer. 
  1. With a slotted spoon add your delicious Ottimo Four Cheese Ravioli to your marinara sauce.  
  1. Finish with freshly torn basil leaves and a good sprinkle of oregano  

 

 

Pear and rocket salad? 

 

Ingredients: 

1 conference pear 

2 tbsp chopped Walnuts? 

125g? rocket leaves 

Shaved parmesan, to serve 

 

Dressing: 

2 tbsp olive oil 

2 tbsp red wine?vinegar 

1 tbsp lemon juice 

Salt and pepper 

 

Method: 

  1. Rinse your rocket leaves and dry them 
  1. Add them to a medium sized salad bowl 
  1. Wash and slice your pear and add it to the bowl 
  1. Make your dressing by adding the olive oil, red wine vinegar and lemon juice to a small?jar with a lid, give it a shake and drizzle over your salad 
  1. Finish with a few shavings of parmesan?
