A great way to use stale bread and turn it into a delicious treat.Ingredients:400g stale bread10g baking powder140g brown sugar60 cocoa powder2 lrg free range eggs100g chocolate pieces300ml milkTsp. vanilla extractFor the ganache:300g chocolate300ml full fat creamMethod:? Break the bread into pieces and put in a blender, blend until it becomes bread crumbs? Add the sugar, cocoa powder, baking powder and pulse until mixed through.? Add the eggs, vanilla and milk, blend until it becomes a cake batter? Add to an 8” cake tin, sprinkle over the chocolate pieces and bake at 150 degrees for 20minutes? Allow to cool completely on a rack? Slowly heat your cream (but don’t let it boil)? After 2 minutes, pour the cream over the chocolate and let sit for 2 minutes? Slowly wisk the cream and chocolate until totally combined, allow to cool to roomtemperature? pour the ganache over the cake until completely covered. Place in the fridge to set.? Garnish with fresh berries and enjoy
