A great way to use stale bread and turn it into a delicious treat.
Ingredients: 400g stale bread 10g baking powder 140g brown sugar 60 cocoa powder 2 lrg free range eggs 100g chocolate pieces 300ml milk Tsp. vanilla extract For the ganache: 300g chocolate 300ml full fat cream Method: ? Break the bread into pieces and put in a blender, blend until it becomes bread crumbs ? Add the sugar, cocoa powder, baking powder and pulse until mixed through. ? Add the eggs, vanilla and milk, blend until it becomes a cake batter ? Add to an 8” cake tin, sprinkle over the chocolate pieces and bake at 150 degrees for 20 minutes ? Allow to cool completely on a rack ? Slowly heat your cream (but don’t let it boil) ? After 2 minutes, pour the cream over the chocolate and let sit for 2 minutes ? Slowly wisk the cream and chocolate until totally combined, allow to cool to room temperature ? pour the ganache over the cake until completely covered. Place in the fridge to set. ?
