Biscuits & Honey

Ingredients:

  • 300 g self-raising flour (2 cups)
  • 15 g baking powder (3 teaspoons)
  • 10 g sugar (2 teaspoons)
  • ½ teaspoon cream of tartar (less than 1 g)
  • ¼ teaspoon salt (2 pinches)
  • 115 g butter, cubed (½ cup)
  • 160 mls full-fat milk (2/3 cup)

Method:

Oven 225 degrees Celsius (450 degrees Fahrenheit).

In a medium-sized bowl, stir together flour, baking powder, sugar, cream of tartar and salt. Cut in butter until mixture resembles coarse crumbs. Make a well in the centre; add milk all at once. Stir just until dough clings together.

Knead gently on a lightly-floured surface for up to 10 strokes. Roll or pat to ½ - inch thickness. Cut with a 2 ½ - inch biscuit cutter or drinking glass, dipping cutter in flour between cuts. Transfer to an ungreased baking sheet.

Bake for 10-12 minutes or until golden. Serve warm with butter and honey. Makes 10-12 biscuits.
