Chicken schnitzel burger & spicy wedges
Ingredients for 2
2 chicken breasts
100g Flour
1 tsp garlic granules
1 tsp dried oregano
100g breadcrumbs
1 Egg
1 tbsp Butter
1 tbsp Olive oil
2 brioche burger buns
100g creme fraice
1 tbsp Sriracha sauce
1tsp honey
Rocket leaves
4 slices of gherkin
2 large baking potatoes
3 tbsp olive oil
1 tsp smoked paprika
½ tsp cayenne pepper
½ tsp black pepper
Method
Put the flour into a medium size bowl with the garlic granules, oregano and smoked paprika.
Add the egg to another bowl and beat it.
Add the breadcrumbs to a third bowl.
Cut the chicken breast in half lengthways. Put it between 2 pieces of cling film. Using a rolling pin or a meat hammer hit the chicken breast to flatten it.
Dip the chicken into the flour, dust it off, then the egg and finally into the breadcrumbs.
Heat the butter & olive oil in a frying pan on a medium heat. Add the chicken and fry until golden on both sides and cooked through. This will take roughly 4 mins each side.
Mix the crème fraiche, sriracha sauce and honey in a small bowl.
Assemble burger by spooning the crème fraiche onto the toasted burger bun. Add the chicken and then gherkin. Top with iceberg lettuce and more sauce. Finally the burger lid.
To make the wedges but each potato in half. Then cut each half lengthways into 4 pieces. Soak the wedges in a bowl of water for 30 mins. Drain and pat dry.
Microwave wedges for 6 mins on a microwave proof bowl.
Add the olive oil, paprika, cayenne pepper to the wedges and mix well.
Spread the wedges flat on a baking tray with a liner.
Bake for 25-30 mins at 200C turning half way.
