INGREDIENTS :
· 300g Dry spaghetti or 500g fresh tagliatelle
· 2 Chicken breasts, cut into bite-sized pieces
· 1 Medium onion, finely chopped
· 6 Fresh tomatoes, chopped
· 4-5 Cloves of garlic crushed
· 2 Tbsp of finely chopped ginger
· 1-2 Fresh chillies, finely chopped
· 2 Tbsp of vegetable oil
· ¼ Tsp turmeric powder
· Salt to your taste
· 1 Tsp garam masala
· 1 Tbsp tahini
· 3 Cups of chicken stock
· 7-8 Mushroom buttons
· 3-4 Springs of scallions, finely chopped
· 1 Tbsp of soya sauce
· ½ Red pepper, finely chopped
· Handful of fresh coriander, freshly chopped
· 1 lemon cut into wedges
METHOD :
· If you are using dry spaghetti or noodles, then boil until al dente, drain and put it aside.
· Heat oil in a pot, add chicken, salt and turmeric.
· Once the chicken is cooked, add onion, chilli, garlic , ginger, garam masala and tomatoes. Cook until the tomatoes become soft.
· Add mushrooms, red peppers , spring onions, tahini and soya sauce.
· Add boiled and drained spaghetti, noodles or fresh tagliatelle with chicken stock. Let it boil, taste and adjust seasoning then add coriander.
· Serve hot and enjoy.
