Mini Christmas Puddings

(10-12 Servings)
INGREDIENTS
• 1 Cup of ground almond (or whole almonds)
• 1 Cup of dates
• 2 tsp. vanilla
• 1 Tbsp. rum essence (or any spirit)
• 2-4 Tbsp. maple syrup
• 1/2 cup dried fruits (sultanas, raisins, cherries, apricots, etc.)
• 1 tsp of mixed spice
• 1 orange zest
• 1/4 Cup finely chopped almonds (optional)
Garnish
• 1/2 cup cocoa butter (or good quality white chocolate)
• Raspberries, pomegranates, cranberries or dried cherries
• Fresh mint leaves


METHOD:
• Blend almonds, dates, vanilla, rum essence and maple syrup in a food processor. Pulse a few times then blend until dates become a dough like consistency.
• Add dried fruits, mixed spice and finely chopped almonds to the food processor and blend for a couple of minutes until the mixture comes together. Fold in orange zest (do not blend in the food processor or it will get bitter).
• Shape and form the mini puddings by using one tablespoon of the mixture.
• Decorate each one with a small drizzle of cocoa butter or white chocolate and top it off with raspberries and a mint leaf.
Chef Tips:
• You can add brandy or cherry to this recipe, also any dried fruits of your preference. This is a perfect recipe for homemade Christmas gifts, use dried cherries and pumpkin seeds on top to decorate, so it will last longer. Keep in an airtight container. It will keep for 2 weeks.
