Potato and cheese waffles with crispy bacon and spiced maple syrup

Serves 4

Ingredients:

·         150 g self-raising flour

·         1 teaspoon baking powder

·         100g cooked mashed potato

·         1 large free-range egg

·         200 ml milk

·         50g gruyere cheese grated

·         50g parmesan cheese grated

·         Pinch of salt

·         Vanilla extract, optional

·         12 slices streaky bacon

·         100mls maple syrup. star anise, 1 chilli, 1 stick cinnamon

·         (To make the spiced maple syrup, warm the maple with the spices for 10 minutes and set to one side until ready to serve)

Method:

  1. Mix all the dry ingredients together in a large bowl.
  2. in a separate bowl, Gradually beat in the egg, mashed potato, then add the milk slowly, whisking well to get as smooth a batter as possible.
  3. fold in the dry ingredients 
  4. Get your waffle machine ready. Once it’s hot, ladle in the batter mixture and seal, following the machine instructions until your waffles are cooked.
  5. Grill the bacon until crispy
  6. To make the spiced maple syrup, warm the maple
