Potato and cheese waffles with crispy bacon and spiced maple syrup

Serves 4
Ingredients:
· 150 g self-raising flour
· 1 teaspoon baking powder
· 100g cooked mashed potato
· 1 large free-range egg
· 200 ml milk
· 50g gruyere cheese grated
· 50g parmesan cheese grated
· Pinch of salt
· Vanilla extract, optional
· 12 slices streaky bacon
· 100mls maple syrup. star anise, 1 chilli, 1 stick cinnamon
· (To make the spiced maple syrup, warm the maple with the spices for 10 minutes and set to one side until ready to serve)
Method:
- Mix all the dry ingredients together in a large bowl.
- in a separate bowl, Gradually beat in the egg, mashed potato, then add the milk slowly, whisking well to get as smooth a batter as possible.
- fold in the dry ingredients
- Get your waffle machine ready. Once it’s hot, ladle in the batter mixture and seal, following the machine instructions until your waffles are cooked.
- Grill the bacon until crispy
- To make the spiced maple syrup, warm the maple
