Chef Adrian shares a delicious recipe for Scallops, Black Pudding & Apple.
INGREDIENTS
6 scallops with the roe removed
6 slices of good quality black pudding
A handful of water cress
1 lemon juiced
1 Granny Smith apple
METHOD
1.You need to be super quick with this.
2.On a smoking hot pan place in some oil. Season the scallops with sea salt and then place them in starting at 12 o clock and working your way around the clock.
3.Add in the black pudding and cook until golden. As for the scallops you want an great caramelisation on them. Once achieved remove and serve immediately.
4.With the apple slice it in batons. Mix the apple with the water cress and lemon juice.
5.Serve it all up with the salad in the middle and enjoy.
