What you need:
450g Self Raising Flour
10g Baking Powder
100g Butter
Pinch Salt & Pepper
200g Black Pudding
Chopped Chives & Parsley
1 OR 2 Red Apple - Personal choice is Pink Lady
200 / 400ml Buttermilk
1 Egg
How to:
Preheat oven to 200°C/400°F/Gas 6. Line baking tray with baking parchment.
Coarsely grate the apple and set aside.
Dice the black pudding and set aside.
Place the flour, baking powder, salt and pepper into a mixing bowl and mix well.
Gently rub in the butter.
Add in the black pudding, chives and parsley.
Finally add the apple and sufficient milk to make a soft dough.
Turn onto a floured surface and gently knead.
Roll dough out to about 1.5" / 2" and cut out scones.
Place on tray, brush with egg and bake for 15 to 20 minutes until risen and golden brown.
Cool on a wire tray.
