Spicy Nduja Sausage Roll with Apple Sauce

Method:
This is a simple but really tasty recipe. Start with your filling, so place a large pan on a medium high heat, and then add your sausage, and nduja, and thyme. Mix it all well together, and fry until golden brown. Leave it to the side to cool down. Next add your apples, and butter to a small pot. Cook on a low heat until the apples break down and form a sauce, if necessary add a small splash of water to give it the consistency of a thick sauce. Season lightly and leave to cool.
Now lay out your sheet of puff pastry, and place your sausage mixture in a straight sausage shaped line down the centre. Next spoon your apple sauce over the meat. Brush along the pastry to the front of the filling with egg yolk, and then pull the puff pastry over the filling to make a sausage roll shape, and press firmly down to seal. Once sealed trim off any excess pastry, and use a fork to further seal and decorate the edge of the pastry. Next brush the sausage roll with the egg yolk, and finally using a knife, cut some shallow slits across the top of the pastry to allow steam to escape while baking. Place it in a fan oven at 180 degrees, until the pastry is golden brown and puffed up (15/20 mins).
To Serve
Simply remove your spicy sausage roll from the oven, and cut it up into individual portions, and serve. Its also excellent cold the next day. Enjoy!
