Lemon and Herb Salmon Parcels
INGREDIENTS:
2 salmon fillets
1 tbsp olive oil
1 garlic clove, minced
½ tsp dried oregano
½ tsp lemon pepper
1 lemon, sliced
METHOD:
1. Cut 2 large pieces of parchment paper, scrunch up and wet under the tap to prevent burning in the airfryer.
2. Lay each salmon fillet on top of a piece of parchment paper (enough to wrap the salmon in).
3. In a ramekin, add the oil, garlic, oregano and lemon pepper, and mix well.
4. Brush the oil and herb mixture on top of the salmon fillets, then top with the lemon slices.
5. Seal each seasoned fillet into a parcel and airfry at 190°C for 10-12 minutes, until the salmon is opaque and flaky.
6. Serve with mash or boiled baby potatoes and greens.
