Simple Strawberry Mousse

Ingredients:
250g strawberries
25g caster sugar
140g mini marshmallow
200ml double cream
Method:
1) Put all but two strawberries into a pan along with 100ml of water along with the caster sugar.
2) Over medium heat, cook the strawberries until soft enough to mash, it should take around three minutes.
3) Take them off the heat and squash the berries using a fork, until they turn into a pulpy consistency.
4) Add the marshmallows, then stir them into the hot strawberries until they dissolve and leave to cool.
5) Whip the cream until it holds its shape and then fold it into the cooled strawberry mix
6) Spoon the mixture into one bowl or separate bowls and chill for about two hours, or until set.
7) Cut the reserved strawberries in half and use it to decorate the mousse before serving.
