Alberto Rossi's Italian Breakfast Cookies
Ingredients:
250 gr Ground Almonds
220 gr Caster Sugar
2 Egg Whites
Icing Sugar
Instructions:
Whip the Egg whites in a mixer; after 3 minutes of whipping, add half of the sugar and keep whipping until you have stiff peaks.
In a bowl, mix together the Ground Almond and the rest of the sugar.
Pour on top the whipped egg whites and with the help of spatula fold gently.
Pre-heat the oven to 160C.
Put some baking paper over an oven tray; take some of the cookie mix in your hand and make a small ball then ley it on the tray.
Cook for 15 minutes; once cooled down, with the help of a sieve, dust some icing sugar on them.
