Tara Walker's Chicken Fajitas from Scratch with Salsa & Guacamole
Ingredients
For the Spice Mix:
1 tsp caster sugar,
1 tsp ground cumin,
1 tsp ground coriander,
½ tsp cayenne,
½ tsp mixed herbs,
½ tsp ground black pepper,
½ tsp paprika
Tomato Salsa:
1 clove of garlic, minced
½ a red onion,
1 tsp sugar
2 tablespoons red wine vinegar
A handful of fresh coriander chopped
Pinch of Sea Salt
Guacamole:
1 garlic clove, minced
Juice of ½ a lime
Small handful of fresh coriander
Red chili, deseeded & chopped finely
A pinch of sea salt flakes
Chicken Fajitas:
3 tablespoons Spice Mix
½ a Red Pepper
½ an Onion, sliced
Grated cheddar cheese
Sour Cream
Rapeseed/ Sunflower Oil
Method
For the guac - Mash the avocado, garlic, and lime juice together in a bowl and add a pinch of sea salt and red chili to taste.
Place the Chicken, Peppers & Onions in a large bowl and sprinkle the seasoning over and mix it through with a spoon. Allow to sit for a couple of hours if possible.
Heat the oil in a frying pan and add the chicken. After a minute or two, add the vegetables.
Stir fry until the chicken is cooked through. You can check this by taking a piece out of the pan and cutting it in half. If it is completely white on the inside, it is cooked.
Place the chicken and peppers & onions into the middle of a tortilla wrap and add the cheese, salsa, and sour cream.
Roll one side of the wrap over to the middle, then tuck in the end and roll the other side of the wrap over.
