Cacciatore means "hunter" in Italian. In cuisine, alla cacciatora refers to a meal prepared "hunter-style"
Serves 6
Ingredients:
12 Deboned Chicken Thighs
2 x 65 gr Smoked Pancetta (in the Shops)
800gr (2 Tins) Tomato Pulp
3 Carrots, Peeled and Diced
3 Pieces of Celery, Diced
1 Medium Size Onion, Chopped
1 Chicken Stock Cube
2 Tablespoons Capers
2 Tablespoons halved Kalamata Olives (no Stone)
300ml Water
Salt, Pepper
Thyme, Bay Leaf
Flour
1 Glass Red Wine
Oil
Instructions:
Heat up a pan, add some oil, dust the Chicken thighs in flour, season with salt and pepper and pan fry on both sides. Reserve.
In a cast iron pot, add some oil over medium heath and cook all the vegetables with the pancetta, for about 5-6 minutes, deglaze with the red wine.
Add on top of the vegetables, the pan fried Chicken, open the tomato cans and pour on top.
Add the Chicken Stock Cube, the bay leaf and thyme and the water.
Bring to the simmer, put in the oven at 150C for about 45 minutes.
When ready, remove from the oven, adjust with salt and pepper and serve.
If you don’t have a cast iron pot, you can cook all in a pan and transfer into an oven dish, cover it with tin foil so it won’t dry out.
