Baked Apple Pancake

Krissy Gibson's Baked Apple Pancake

Ingredients:

60 g butter

2 apples

6 g cinnamon (2 teaspoons)

110 g white sugar

110 g light muscovado sugar

110 g self-raising flour

5 g bread soda (1 teaspoon)

pinch salt

180 mls buttermilk

3 eggs

30 g melted butter

Method:

Melt 60 g butter in cast iron pan over medium heat.

In a small bowl, blend sugars and cinnamon.

Peel and slice apples. Add them to pan, followed by sugars and cinnamon. Cook apples until soft, about 5 minutes.

In a small bowl, blend flour, soda and salt.

In a large bowl, whisk eggs then add buttermilk, melted butter and dry ingredients. Whisk again until smooth.

Add this batter to the apples in the pan. Do not stir.

Bake at 160 degrees Celsius for 30 minutes until puffy and light brown. Sprinkle with icing sugar and serve hot.
