Pork, Prawn & Chinese Chive Dumplings.
Ingredients
Wrapper: Dumpling Wheat Flour 300g
Water 150g
or use 227g Readymade dumpling wrappers
Filling:
Minced Pork 200g
Raw Prawns finely chopped 85g Chinese Chives 70g Spring Onion 1pc
Seasonings:
1 1/2 tsp light soy
1/2 tsp Sugar
1/2 tsp Salt
1/3 tsp White Pepper
1 tsp Sesame Oil
1/2 tsp Corn flour 1 tsp Chicken Powder (optional)
Oil 1 tsp
Dipping Sauce:
1tbsp ginger Shreds
2 tbsp Spring Onion Shreds
4 tbsp light soy sauce
2 tbsp Chinkiang Chinese Vinegar
1/2 tsp Sesame Oil
Method
Step 1: Create the Dough using the dumpling flour and water. Step 2: Roll Dough into small ball shapes and flatten to form discs to form the dumpling wrapper. Step 3: Combine all the ingredients of the dipping sauce and set aside Step 4: Chop spring onion and chives and mix them into the minced pork . Add the minced prawn and all the seasonings to make the filling. Step 5: Spoon the filling into the centre of the dumpling wrapper. Step 6: Fold the wrapper in half to form a half moon shape. Seal the edges with water if you need. Step 7: Cook the dumplings in boiling water until the dumplings float on the surface. Then add some
cold water and wait for it to boil again. Repeat this process twice until the dumplings are cooked. Serve with the dipping sauce.
