George Stephens is making Pan Seared Tuna with Fried Rice
Ingredients:
•140 G OF TUNA PER PERSON
•100g OF PRE COOKED RICE
•1 SPRING ONION FINELY CHOPPED
•1 EGG WHISKED UP
•30 g OF SMALL BOSTON SHRIMP
•30G OF CASHEW NUTS
•30G OF FROZEN PEAS
•1 STREAKY RASHER CUT IN THIN STRIPS
• 20 G OF CARROT CUT IN THIN STRIP
•2 tbs OF OYSTER SAUCE
•2 tbs OF HONEY
•2 tbs OF SWEET CHILLI SAUCE
•2 tbs OF LIME JUICE
•1 tbs OF SESAME OIL
•1 ts OF SESAME SEEDS
• SMALL BUNCH OF FRESH CORIANDER
METHOD:
- Fry the bacon for a couple of minutes in a large pan or wok. Now add the cashew nuts, carrots, peas and stir fry quickly. Add the pre- cooked rice and fry for 2 minutes. Then add the cooked shrimp and stire in the egg to finish it off.
- Season your tuna with salt and pan sear for 2 mins on each side. Remove the tuna and place on the rice.
- Now add the oyster sauce, honey, sweet chilli, coriander and lime to the pan and bring to the boil
- Pour over the tuna and then drizzle with seasame oil
