Chilli Crusted Salmon with Chilli Roasted Sweet Potato & Brocolli

Ingredients

6 darnes of salmon

Chilli Crust:
2 red chillies (seeds retained-some like it hot)
2 cloves of garlic
Pinch of cayenne pepper
Juice of 1 lime
2 stems of spring onions-chopped
2 large dessertspoons of oil

Method
1) Very simply put all the ingredients for the crust into a food processor and spread over the salmon
2) Allow the salmon to marinade for 4-6 hours but a few minutes is sufficient as the crust is quite well flavoured
3) Preheat the oven to 190C/375F/Gas Mark 5
4) Arrange the salmon on a baking tray (i normally line the baking tray with a little parchment paper first)
5) Transfer to the oven and bake for 17-20 minutes depending on how thick the pieces of fish are
6) When cooked the salmon should be firm to the touch

Ingredients

Spiced Sweet Potatoes:
2 large sweet potatoes-peeled and cut into cubes
1 dessertspoon oil
Salt & black pepper
½ teaspoon chilli powder (or more as desired)

Method
1) Place the sweet potatoes into a bowl, add in the oil and seasoning and chilli powder and mix well.
2) Place them on a flat tray, lined with baking parchment and bake in a hot oven (190C/375F/Gas Mark 5) for 20-25 minutes.

To Serve:
Pile the sweet potatoes onto a large serving plate and top with the spicy salmon
Garnish if desired with some steamed broccoli or fresh rocket or herbs and serve immediately.
