The Happy Pear share a pair of their delicious recipes.
RECIPE 1:
Spicy Red Pepper Pasta for one
Ingredients:
100g wholewheat pasta
15g pine nuts
40g Spinach (handful)
Happy Pear Spicy Red Pepper Pesto
Method:
1. Boil 100g pasta, as directed on packet (approx. 9 minutes)
2. When pasta is boiling put dry pan on medium heat
3. Add handful of pine nuts on the pan to toast, 2/3 minutes, keep moving nuts in the pan so they don’t burn. When done, remove from heat.
4. Drain Pasta and return to pan
5. Add 2 tablespoons of Happy Pear Spicy Red Pepper Pesto
6. Stir in handul of spinach until it wilts
7. Top with toasted pine nuts
8. Serve and enjoy!
RECIPE 2:
Happy Pear Easy Canapes
Ingredients:
SuperValu Signature Tastes crackers
50g cherry tomatoes
Small bunch fresh basil
Happy Pear Black Olive Tapenade
Method:
1. Take SuperValu Signature Tastes crackers
2. Top each cracker with teaspoon of Happy Pear Black Olive Tapenade
3. Top each cracker with quartered cherry tomatoes
4. Finish with fresh basil
