Southern Biscuits & Honey
(makes 10 biscuits)

Ingredients:
300 g self-raising flour
15g baking powder (3 teaspoons)
10g sugar (2 teaspoons)
½ teaspoon cream of tartar (less than 1g)
¼ teaspoon salt (2 pinches)
115g butter, cubed
160mls full-fat milk

Method:
1. Place oven on 225 degrees Celsius (450 degrees Fahrenheit).
2. In a medium-sized bowl, stir together flour, baking powder, sugar, cream of tartar and salt. Cut in the butter until mixture resembles coarse crumbs.
3. Make a well in the centre; add milk all at once. Stir just until dough clings together.
4. Knead gently on a lightly-floured surface for up to 10 strokes. Roll or pat to ½ - inch thickness. Cut with a 2 ½ - inch cutter, dipping cutter in flour between cuts.
5. Transfer to an ungreased baking sheet. Bake for 10-12 minutes or until golden.
6. Serve warm with butter and honey.
