Ingredients
(Makes 8 patties, serves: 4)
500g lean pork mince
4 shallots, finely diced
40g ground almonds
1 large egg
½ tsp sage
1 tsp parsley
1 tsp thyme
3 cloves of garlic, minced
1 tsp coconut oil
Coarse sea salt and cracked black pepper
Method:
1. Combine all of the ingredients bar the coconut oil in a bowl and mix thoroughly before shaping into “patties”.
2. Heat a large frying pan with the coconut oil and cook the patties on high for 1–2 minutes before reducing the heat and cooking for a further 3 minutes.
3. Increase the heat again and flip the patties, cook on high on the opposite side for 1–2 minutes before reducing the heat again.
4. Cook on low for an additional 3–4 minutes until the patties are fully cooked, serve and enjoy!
