Joes Overnight Minted Centre Loin Lamb Chops with Spiced Chickpeas

Ingredients
8 lean centre loin lamb cutlets or chops (marinade overnight in 100ml of oil, 20g minced garlic, 100g chopped mint)
Sprinkle of sea salt
1 red onion, chopped
1 courgette cut into small dice
2 tsp cumin seed
400g can chickpea, drained and rinsed
2 tbsp chopped parsley
squeeze lime juice
Method
- Heat a heavy based pan to medium high heat.
- Add the lamb, season with sea salt and cook for 2 minutes, turn and repeat the process. Remove from the pan and leave to one side
- Re-heat the pan, add some more oil, quickly sauté off the onion and courgette for 1-2 minutes, add the cumin and cook for another minute
- Add in the chickpeas, parsley and lime juice and mix well
- Place back in the chops and cook out, serve with some lovely crusty bread
