Joes Overnight Minted Centre Loin Lamb Chops with Spiced Chickpeas

Ingredients

8 lean centre loin lamb cutlets or chops (marinade overnight in 100ml of oil, 20g minced garlic, 100g chopped mint)

Sprinkle of sea salt

1 red onion, chopped

1 courgette cut into small dice

2 tsp cumin seed

400g can chickpea, drained and rinsed

2 tbsp chopped parsley

squeeze lime juice

 

Method

  1. Heat a heavy based pan to medium high heat.
  2. Add the lamb, season with sea salt and cook for 2 minutes, turn and repeat the process. Remove from the pan and leave to one side
  3. Re-heat the pan, add some more oil, quickly sauté off the onion and courgette for 1-2 minutes, add the cumin and cook for another minute
  4. Add in the chickpeas, parsley and lime juice and mix well
  5. Place back in the chops and cook out, serve with some lovely crusty bread
