Nicola Halloran, from the Wonky Spatula, is making Lamb Meatballs with Mint Sauce Potato Cakes

Method:
1. In a large bowl combine all of the ingredients.
2. Form into meatballs, recipe yields 8 – 10.
3. Heat a large frying pan over medium high heat. Add 1 to 2 tablespoons of oil to the pan, and add as many meatballs as fit in a single layer without touching (this is key to getting the meatballs to brown properly). Cook, turning to brown all sides, until the meatballs are cooked through, about 8 minutes total.
4. Serve with some mince sauce and potato cakes, Enjoy!
