JOE'S CHRISTMAS CHERRY, PEAR AND MULLED WINE TRIFLE
Ingredients
1 orange, peel only, white pith removed
1 lemon, peel only, white pith removed
1 tbsp grated ginger
1 cinnamon stick
2 Vanilla Pods
2 cloves
100ml vodka
6 cardamom pods
300ml port
600ml red wine
160g caster sugar
25g sheet gelatine, softened in cold water, drained
6 pears, peeled and poached till nice and soft
40 amaretti cherries
400g fresh custard
5oo ml, whipped until soft peaks form when the whisk is removed
handful flaked almonds, toasted, to decorate
Method
1. Place the first 10 ingredients into a pot (slice the vanilla lengthways and separate the seeds beforehand and add all into the pot), Bring to the boil and let simmer for 20 minutes,
2. Add the softened gelatine and mix well until dissolved, strain into a jug and let cool
3. Place ½ of each pear, seeds and root removed, along with 3 cherries into 12 serving glasses and cover with the wine, ensure it is fully cool and place in a fridge overnight
4. Next day mix the 400g of made custard with 400ml of whipped cream and place over the now set glasses, refrigerate and garnish with some more whipped cream, toasted almond and maybe a half an amaretti cherry
