Baker Kelly Ging from Kelly Lou Bakery in Portlaoise made Beauty and the Beast inspired vanilla cupcakes this morning!

Ingredients:
Cupcake
180g room temperature butter
180g caster sugar
180g self-raising flour
3 eggs
Vanilla extract
Buttercream icing:
200g soft butter
400g icing sugar, sieved
Few drops of vanilla extract
Few drops of food colouring if required.
Milk (if needed!)
Method:
This easy recipe uses the all-in-one method. Preheat oven to 175C. Place butter, sugar, flour, eggs and a few drops of vanilla in a mixer and beat together at a medium speed until well combined and there is no flour or butter visible.
Spoon into 12 cupcake cases and bake for 16-18 minutes until well risen and golden. Remove from tin and cool on a rack.
For the buttercream icing, combine the icing sugar and soft butter, beating slowly at first until combined. Add vanilla and food colouring and increase mixer speed, beating for 4-5 minutes until really light and fluffy. If the icing is a bit stiff add a few drops of milk to loosen.
Spoon or pipe the buttercream on to the cupcakes and decorate with sprinkles or sugar roses.
