If you fancy something thats easy to make and rich in flavour then why not give Catherines honey & yogurt bread loaf a try!
Ingredients
225g/8oz Odlums/Hearts Delight Wheatmeal
1 tablespoon Shamrock Light Muscovado Sugar
1 Egg
150ml/¼ pint Natural Yoghurt
4-5 tablespoons Rowse Honey
3 tablespoons Oil
1 level teaspoon Odlums Bread Soda
1 level teaspoon Goodall's Cinnamon
100g packet Shamrock Chopped Almonds (optional)
Method
1. Preheat oven to 150°C/300°F/Gas mark 2. Grease and line 900g/2lb loaf tin.
2. Beat together the sugar, egg, yoghurt, honey and oil.
3. Add wheatmeal, bread soda, cinnamon and half the nuts to the liquid ingredients.
4. Beat well until all ingredients are blended.
5. Transfer to the prepared tin. Level off top with back of spoon. Sprinkle remaining nuts on top.
6. Bake for about 45 mins until springy to the touch.
7. Cool in the tin. When cold, wrap in greaseproof paper and tinfoil.
