Pork chops are always a favourite when it comes to preparing a BBQ.
(Serves 4-6)
Ingredients
2 tablespoons of thick honey
4floz/110ml dark soy sauce
2 tablespoons of sweet chilli jam
2 pieces of star anise
3 cloves of garlic
Salt & Black pepper
Dash of Tabasco sauce
12-16 pork chops (or 4 small racks of ribs)
Method
Finely chop the garlic and add this to a large bowl with all of the rest of the ingredients of the marinade. I normally break the star anise slightly so as to allow the full flavour to infuse.
Add the pork chops to this marinade and leave to marinade for a couple of hours (overnight is permitted also)
Preheat the barbecue
Cook the pork chops on the barbecue for 4-5 minutes ensuring that they are cooked through.
