Ingredients:
210g pork fillets
100g onion (diced)
1 clove of garlic (crushed)
100g golden delicious apple (peeled and diced)
1/4 teaspoon each of cumin, corriander, paprika and garam masala
100g flour
100ml fresh full fat cream
Splash of brandy
1 papadum
Method:
1. Sieve together flour and spices into a container.
2. Cut pork into 3 medallions, roughly 70g each.
3. Place between 2 sheets of plastic and batten out to 3cm in depth.
4. Pass the meat through the seasoned flour.
5. Seal on a hot oiled pan, 30 seconds on either side.
6. Add the onion and garlic and cook for 1 minute.
7. Flame with brandy.
8. Add the apple and cream and reduce heat until the sauce thickens.
9. Check for seasoning.
10. Serve with crispy papadum.
