Kelly Lou's Chocolate Chip Cookie sandwiches
Ingredients:
Cookies:
150g soft room temp butter
125g light brown sugar
100g Caster Sugar
Drop of vanilla extract
1 egg
1 egg yolk
300g Plain Flour
1/4 tsp Bread soda
Chocolate Chips (as much as you want)
Buttercream
500g icing sugar
250gm soft bitter
Vanilla extract
Sprinkles to decorate.
Method
- Preheat oven to 175 degrees
- Cream together your butter and both sugars
- Add vanilla extract
- Beat in the egg and egg yolk
- Add In sifted flour & bread soda and stir to combine until there are no traces of flour left.
- Add in chocolate chips
- Use a icecream scoop and scoop your cookie dough on to a baking tray, do not flatten.
- bake in a preheated oven for 12-14 minutes.
- when your cookies come out of the oven they will be soft but will crisp up as they cool.
- to make your buttercream, beat together icing sugar, butter & vanilla extract until smooth.
- when your cookies are cool, sandwich the cookies together with the buttercream and dip the exposed sides of the buttercream in sprinkles.
