Makes 12 Biscuits
Ingredients
¼ cup of boiling water
1 tsp bicarbonate soda
320g plain flour
Pinch of sea salt
200g desiccated coconut
200g porridge oats
250g unsalted butter melted
200g brown sugar
40g golden syrup
1 large egg, lightly beaten
Instructions:
1.Place parchment on two baking trays.
2.Pour the hot water into a small bowl and add the bicarbonate of soda. Let sit for 5 minutes while you mix the remaining ingredients.
3.Mix the flour, sea salt, desiccated coconut and porridge oats together in a bowl.
4.This next part can be done in the microwave or a pot on the stove top. Heat the butter. Once melted, remove from heat and add the brown sugar and golden syrup. Stir together until the butter is incorporated.
5.Allow to cool slightly and add the egg. Whisk together
6.Add the boiling water and soda to the butter mix and whisk.
7.Add the butter mixture to the dry. Gently mix until it all comes together to form a dough.
8.Using your hands, take some dough (about two - three tablespoons) and roll it in your hands to form a ball. Flatten the dough ball onto the tray
9.Bake in a preheated oven on 180°c for 12 minutes.
10.The biscuit will be nice and golden on top when it is cooked.
Enjoy with a hot cup of tea.
