Sticky Garlic Parmesan Chicken Skewers on a Herby Rice Salad

Method – Chicken Skewers
1. Preheat oven to 200°C / 180°C fan.
2. In a large bowl, whisk olive oil, honey, garlic, Parmesan, nutritional yeast, paprika, salt, and pepper.
3. Toss chicken fillets in marinade, ensuring all sides are coated.
4. Thread chicken onto skewers (2–3 fillet pieces per skewer for elegance).
5. Place on a lined baking tray and bake 15-18 min, turning halfway, until lightly caramelised and fully cooked.
Method – Grain Salad
1. In a large bowl, combine cooked wild & red rice, quinoa, and chickpeas.
2. Drizzle olive oil and season with salt and pepper. Toss gently.
3. Fold in fresh herbs evenly.
4. Just before plating, sprinkle Good4U seed mix for texture and subtle nutty flavour.
5. Serve on a large platter and garnish with herbs, feta and a drizzle of olive oil.
