Sticky Garlic Parmesan Chicken Skewers on a Herby Rice Salad

Serves: 6 | Prep: 20 min | Cook: 20 min

Ingredients - Chicken Skewers

  • 6 medium chicken breast fillets (~150g each, skinless, trimmed)
  • 6 tsp olive oil (~30ml)
  • 9 tbsp honey
  • 9 garlic cloves, minced
  • 60g parmesan, finely grated
  • 6 tsp nutritional yeast (~12g)
  • 1 ½ tsp smoked paprika (optional)
  • Salt and freshly ground black pepper
  • Wooden skewers, soaked 30 min

Ingredients – Grain Salad

  • 480g wild & red rice, cooked (80g per serving)
  • 240g quinoa, cooked (40g per serving)
  • 300g cooked chickpeas (~50g per serving)
  • 200g edamame
  • 100g feta
  • 6 tsp olive oil (~30ml)
  • Salt & pepper, to taste
  • Herbs: 2tbsp each chopped fresh coriander, mint, parslay, dill, basil (or to taste)
  • 6-12tsp Good4U seed mix (1-2 tsp per serving for subtle crunch)

Method – Chicken Skewers

1. Preheat oven to 200°C / 180°C fan.

2. In a large bowl, whisk olive oil, honey, garlic, Parmesan, nutritional yeast, paprika, salt, and pepper.

3. Toss chicken fillets in marinade, ensuring all sides are coated.

4. Thread chicken onto skewers (2–3 fillet pieces per skewer for elegance).

5. Place on a lined baking tray and bake 15-18 min, turning halfway, until lightly caramelised and fully cooked.

Method – Grain Salad

1. In a large bowl, combine cooked wild & red rice, quinoa, and chickpeas.

2. Drizzle olive oil and season with salt and pepper. Toss gently.

3. Fold in fresh herbs evenly.

4. Just before plating, sprinkle Good4U seed mix for texture and subtle nutty flavour.

5. Serve on a large platter and garnish with herbs, feta and a drizzle of olive oil.
