Pear and Blue Cheese Crostini

Pear and Blue Cheese Crostini

Takes 10 minutes 

Makes 16 canapes 

Ingredients: 

  • 2 pears, cut into 8 wedges each to cook or chop into matchsticks 
  • 6 streaky bacon (optional) 
  • Olive oil 
  • Sea salt & black pepper 
  • 100g blue cheese, I love Cashel blue 
  • 50g chopped walnuts, toasted 
  • 1 tablespoon?hot honey 
  • 16 crackers of choice or small pieces of toast 

Method: 

  1. Place the pear wedges and bacon onto the same bacon tray, drizzle the pear with a little olive oil and salt and pepper. 
  1. Alternately you can use matchsticks of pear. 
  1. Bake at 200C for 10mins. 
  1. Layer up the cracker/toast with the pear, bacon a sliver of cheese and the crunchy walnuts. 
  1. Drizzle with some hot honey and serve!
