Singapore Style Noodles

Ingredients:

  • 200g thin rice noodles
  • 2 tablespoons vegetable oil
  • 3 cloves garlic
  • 1 small onion
  • 1 small red bell pepper
  • 1 small green bell pepper
  • 100g cooked prawns, ham or char Sui 
  • 1 tablespoon curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon sugar
  • Salt and pepper, to taste

 

Instructions:

  1. Soak the rice noodles in a bowl of cold water for about 10 minutes until they are soft. Drain and set aside.
  2. In a food processor, pulse the garlic, onion, and bell peppers until finely chopped.
  3. Heat the vegetable oil in a wok or large frying pan over high heat. Add the chopped vegetables and stir-fry for 2-3 minutes.
  4. Add the cooked prawns, ham and stir-fry for 1 minute.
  5. Add the curry powder and stir-fry for 1 minute.
  6. Add the soaked rice noodles, soy sauce, oyster sauce, sugar, salt, and pepper, and stir-fry for 2-3 minutes until the noodles are evenly coated with the sauce and heated through.
  7. Serve hot and enjoy!
