Korean Chicken Bowl with Mango, Chorizo Fried Rice and Cashew Nuts

Korean Chicken Bowl with Mango, Chorizo Fried Rice and Cashew Nuts

Ingredients: 

 

  • 3-4 boneless skinless chicken breasts, chopped into bite size pieces or sliced into strips + salt + pepper (to taste) 
  • 1 large red bell pepper, chopped 
  • 1 medium-large “ready to eat”mango peeled and sliced 
  • lettuce leaves 
  • 1 small hand full of toasted cashew nuts 
  • Chorizo sausage? 

sauce 

  • jasmine rice? 
  • 1 teaspoon minced garlic 
  • mango? 
  • Sweet Korean hot sauce? 
  • 1 teaspoon white vinegar? 

 

Instructions 

  1. Heat wok preheat to medium-high heat. Season chicken with salt and pepper to taste. in preheated Airfyer with a dash of oil until chicken is cooked through. 
  1. On 190c 19mins for a 180g fillet 
  1. Slice mango set aside, put garlic, east hot sauce, and vinegar to pan. Stir and continue to cook 2-3 minutes or until sauce begins to bubble slightly. Stir in the cooked chicken and coat it in the sauce. And simmer for 1 min. Slice and Put on top of the warm rice and stir until mixed, 
  1. Serve in lettuce leaves and mango slices in bowls and top with sliced scallions! Enjoy
