Summer Pudding
Who doesn’t have some over ripe or squished berries this time of year and half a loaf of stale bread…..Well this easy no cook dessert is a great way to transform them into a delicious summertime treat.
Ingredients
500g strawberry
300g blackberry
300g raspberry
OR 1.1kg of any mixed berries that you have (all of them work)
175g caster sugar
7 slices stale white bread
Method
Put sugar and 3 tbsp water into a large pan. Gently heat until sugar dissolves – stir a few times. Bring to a boil for 1 min, then add your berries (not strawberries, leave them until last). Cook for 3 mins over a low heat, stirring 2-3 times. The fruit will be nice and soft but still intact. Put a sieve over a bowl and tip in the fruit and allow to drain.
Line a pudding bowl or individual bowls with parchment paper and prepare the bread. Cut the crusts off the bread. Cut each slice int 4 pieces of bread and start to cover the bowl, try not to overlap the bread too much
Once the bowl is fully lined to the top then spoon in the softened fruit, adding the strawberries. Top the bowl with the final piece of bread to create a lid
Cover the top with the remaining parchment and put a side plate on top and weight down with cans. Chill overnight in the fridge. To serve, open out the parchment then put a serving plate upside-down on top and flip over. Put the juice into a jug and pour over the pudding, ensure all the sides get covered. Portion and serve with fresh cream or icecream
