1. In a mixing bowl, combine the garlic, ginger, lime juice, soy sauce, honey, peanut butter, and coconut milk
2. Cut the chicken into generous chunks and mix with 1/3 of the marinade. Ensure each piece is well-coated. If you have the time, let this marinate in the fridge for a few hours to absorb the flavours
3. Soak 4 wooden skewers in water for 30 minutes to prevent them from burning. Skewer the marinated chicken onto each stick. Season as desired
4. Place the skewers on a wire rack and grill under medium-high heat. When they begin to char and brown turn to cook on each side evenly. Check the chicken is fully cooked
5. Pour the remaining marinade into a small saucepan. Cook over medium heat for about 5 minutes, stirring constantly to prevent it from sticking
6. Serve the peanut butter chicken skewers with rice, roasted chopped peanuts, salad, and warm flatbreads.
