Ingredients:
1 mug full of Self Raising Super flour
2 teaspoon baking powder
Pinch of salt
1-2 tablespoon granulated sugar (optional)
1 mug full of buttermilk
1 egg
butter to cook pancakes.
For the Kinder Topping:
Kinder Sauce
Whipped Cream
Happy hippo
For the Lemon Meringue Topping:
Lemon Curd
Egg whites
Caster Sugar
Method
1. In a large bowl mix together the milk, egg, Self Raising flour and salt with a whisk until well combined.
2. Leave in the fridge for 30 minutes to rest
3. Heat a large non-stick pan on a medium heat, add a teaspoon of butter and let it melt and then add two ladles full of pancake batter.
4. Allow to cook for 2-3 minutes and then flip once it’s golden. Cook on the other side for another 2-3 minutes and then stack them on a plate.
5. Make the meringue by whisking the egg whites to soft peaks and slowly adding the sugar
6. Finish the stack with the meringue, lemon curd and blow torch it
7. For the kinder top it with the sauce and the cream and happy hippo
8. Lather each pancake with a good spreading of the tres leches sauce. Once all stacked up, spoon over more of the sauce and then finish with a nice piping of whipped cream. Enjoy!
