Ingredients:
1tbsp oil
400g beef, cut into chunks or cubes
1 red onion
100g ginger
5 cloves of garlic
1tsp Chinese 5 spice
5 Star Anise
1 cinnamon stick
2tbsp black peppercorns
50g brown sugar
100ml dark soy sauce
50ml light soy sauce
50ml sweet soy sauce
400ml beef stock
1 potato (diced)
Method:
* Heat up a pot/saucepan and add a little of the oil into it.
* Add the beef chunks/cubes, in batches, and fry until browned. When each batch is browned, transfer the beef to another dish.
* Very roughly chop the onions, ginger, garlic and coriander stalks. Put them into a food processor and blitz into a spice paste.
* Add the rest of oil to the dish you browned the beef in followed by the star anise, black peppercorns, cinnamon, ginger & 5 spice.
* Gently add in the spice paste and fry for few minutes. Try scraping up any beef bits to add flavour. Continue to fry until the paste is fragrant and softened (add bit of water if the paste sticks).
* Return the beef and any juices to the dish. Stir in the stock, soy sauces & sugar. Bring to a gentle simmer and then add potato.
* Cover the dish, put in the oven at 180c and cook for 21⁄2 hrs until the beef is really tender or cook in a saucepan on hob stirring frequently.
To serve:
* Fry off the ginger in a pan until crispy and sprinkle on the beef. Serve with jasmine rice.
