Ingredients
1 roll puff pastry
Tapenade
Pesto
Spicy tomato sauce
Various cheeses
Egg
Vegan Tapenade
100g kalamata olives rinsed
20g capers
30g parsley
40ml good olive oil
Blitz
Vegan Pesto
100g Basil and or other soft green herbs
¼ TSP salt
2 cloves garlic
Juice of ½ lemon
40ml good olive oil
Blitz.
Method
Roll out the sheet of puff pastry and mentally divide it into three parts.
Spread Tapenade on the first 3rd
Pesto on the second and tomato sauce in the third.
Later with various cheeses, cheddar, goats, feta for example.
Roll over several times to form a Swiss roll shape.
Cut into slices.
Place on a lined tray and brush with eggwash.
Bake in preheated oven at 190ndegrees for 22-25 minutes.
Serve hot or cold.
Ideal lunch box filler.
