Ingredients
Crispy Popcorn Chicken
200g cornflakes ( crushed )
25g nutritional yeast/parmesan cheese
1 tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
2 eggs
2 tbsp fermented hot sauce
750g chicken thighs / breast
Oil for spritzing
Method
Preheat the oven. Chop the chicken into small bitesize pieces. Crush the cornflakes. Stir in the seasoning and the nutritional yeast/cheese.
Crack the eggs on a plate/ Stir in the fermented hot sauce.
Spritz the chicken with oil and place it on a greased oven-proof dish or in the air fryer basket.
You could shallow fry it also. When fully cooked all the way through remove from the oven and serve.
Hot Honey Drizzle
150g honey
½ tsp garlic powder
½ tsp onion powder
Sea salt
2 tbsp fermented hot sauce
Method
Combine all the above ingredients in a bowl and warm through in the microwave.
Broccoli Egg Fried Rice
450g cooked rice ( I love a mix of wholegrain and jasmine )
200g broccoli ( fresh )
2 tbsp sesame oil
2 tbsp rapeseed oil
2 cloves garlic
Small piece fresh ginger
1 egg
3 tbsp soy sauce
4 spring onions
1 tbsp mixed sesame seeds
Method
Pop the broccoli in the food processor and pulse until it resembles rice. Do not over process.
Heat the oil in a wok, add in the garlic and ginger. Toss in half the rice quickly and add in broccoli.
Cook for about 3 to 4 minutes, tossing all the time. Add in the sesame oil and the soy and the remaining rice. Crack the egg, push the contents of the wok to one side and fry the egg. When scrambled, toss it through the rice and broccoli. Allow to cook for a minute or two. Turn off the heat and garnish with spring onions and mixed sesame seeds.
To Serve
Place the rice on one side of the serving plate. Slice the chicken diagonally and fan out across the top. Drizzle the hot honey sauce on top and garnish with some chilli, spring onion and mixes sesame seeds.
