Gareth Mullins' BBQ Pork Ribs with Maple and Whiskey
INGREDIENTS
PORK
• 2 racks of baby back pork ribs
• Spice rub -2 tablespoons smoked paprika
• 2 tablespoons brown sugar, 2 tablespoons salt
• 1 tablespoon black pepper
• ½ teaspoon cayenne pepper
• ½ teaspoon ground coriander
• ½ teaspoon ground cumin
• Mix all these together
GLAZE
• 3 table spoon maple syrup
• 3 table spoon bbq sauce
• 3 table spoon whiskey
• 3 table spoon ketchup
• 100g butter
METHOD
PORK RIBS
Lay out 2 large pieces of tin foil on the table
Put the ribs on top
Season the ribs really well with the spice rub
Wrap the rib really tight with the foil
Now these ribs can be cooked low on the bbq for 3 hours on low heat until tender
You can also do this in a pre-heated oven at 160 for 2 ½ hours
GLAZE
Put the ingredients of the glaze in a small pot on a low heat and whisk to combine
Take the ribs out of the foil and place on to a medium heat on the bbq, use a pastry brush, and generously brush the rib with the glaze for 10 minutes to 15 minutes, with the glaze sticking and caramelizing to the ribs.
Continue this process until the ribs are glazed and shiny
