Thai Sesame and Soy Glazed Chicken

Ingredients

5 chicken thigh, boneless

 

Marinade / sauce

2 garlic cloves, Crushed                                                                                                                            

1 thumb size ginger, chopped                                                                                                                   

2 tbsp fish sauce                                                                                                                                       

2 cup honey                                                                                                                                               

1 cup sweet Thai soy sauce                                                                                                                       

2 tsp black pepper                                                                                                                   

 Handful of finely chopped mint                                                                                                                    

1 tbsp ground turmeric                                                                                                                                      

1 tbsp Sesame Seed                                                                                                                                   

1 spring onion                                                                                                                                              

1 cube of butter                                                                                                                                         

1 cup of water

 

Method:

Combine Marinade ingredients in a bowl.

Add chicken and coat thoroughly in Marinade. Marinade for at least 1 hour, preferably overnight.

Heat a non stick pan over medium heat. Place the chicken skin side down and cover with a lid. Cook for 3 minutes or until the skin is dark golden.

Put the marinate aside to be use as a sauce glaze.

Then turn the chicken, add in a bit of water and butter cover with a lid again, Cook for 5 to 7 minutes until cooked through, keep on brushing on the marinate over the chicken to create a nice golden glaze.

Pour in remaining marinate into the pan and reduced. Ready to serve.

Chopped some spring onion to add before serving.

Served with jasmine rice and mango slaw.
