Aisling Larkin's Asparagus and Smoked Salmon Salad with Sauce Gribiche
Serves 4
Ingredients
200g smoked salmon / hot smoked salmon
200g asparagus
100g radish
100g salad leaves
50g cress
Sauce Gribiche
3 hard boiled eggs
1 tbsp dijon mustard
3 tbsp white wine vinegar
4 tbsp olive oil
1 tbsp capers
1 tbsp cornichons
Sea salt and cracked black pepper
Garnish
Hazelnuts
