Pasta Alla Vodka with a Garlic Lemon Chicken Breast

Eoin Sheehan's Pasta Alla Vodka with a Garlic Lemon Chicken Breast

Ingredients:

1 tbsp oil
1 small white onion
3 garlic cloves
1/2 tsp chilli flakes
50g tomato purée
2 tbsp vodka
50ml cream
100g pasta
30g Parmesan cheese
Fresh Basil & Parsley
1 breast of chicken
1 lemon

Instructions:

In a bowl mix the juice of 1 lemon, minced garlic clove, 1 tbsp oil and chicken breast (allow to marinade if possible). Season with salt and pepper.

Fry the chicken breast on a frying or griddle pan, flipping after 2 min when starting to brown.

In a pot of salted boiling water, add the pasta in and cook for 6-7 min.

In a separate frying pan, heat 1 tsp of oil and gently fry the chopped onion and garlic for 2 minutes.

Add in the chilli flakes and tomato purée to the pan and stir well. Add the vodka and cook off with the mixture for 2-3 minutes.

Pour in the cream and some of the hot pasta water to create a sauce. Season with some salt and pepper.

Toss the cooked pasta into the sauce and mix well. Serve with some fresh basil, Parmesan cheese and our cooked chicken breast.
