Fish Pie
Ingredients:
4-5 white potatoes
400ml milk
2 tbsp butter
2 tbsp plain flour
4 spring onions
1 carrot
2 celery sticks
2 garlic cloves
320g-400g of fish mix (salmon, cod, haddock)
1 tsp Dijon or English mustard
20g chives
Handful frozen peas
Handful grated cheddar
Instructions:
1. Put peeled and cubed potatoes into a pot of boiling water and boil for 15-20 minutes until softened.
2. Add 1 tbsp butter, a splash of milk, chives and mash until smooth. Season with salt and pepper.
3. In a large frying pan fry off the finely diced carrot, celery and garlic in 1 tbsp butter.
4. Add the flour to the pan and mix through. Pour in remaining milk gradually and mix into a smooth white sauce. Add the mustard and season well.
5. Topple in the fish, chopped spring onion and peas and mix through.
6. Add to an oven proof dish and top with the mash. Sprinkle the cheese on top and bake for 35-40 minutes at 200°C.
