Ingredients
50g butter (50g)
3 cloves garlic, peeled and sliced (9g)
Black pepper (1g)
1 tablespoon sesame oil (12g)
3 tablespoons tamari (54g)
1 tbsp honey or maple syrup (21g honey)
3 tablespoons fish sauce (54g)
Small handful sesame seeds (27.5g or 2.5 tbsp)
8 chicken thigh fillets, with the bone in and skin on (600g)
Method
1. Preheat the oven to 200°C.
2. Heat up the butter in a small saucepan and add the garlic, pepper, sesame oil, tamari, maple syrup and fish sauce.
3. Whisk well and pour the sauce over the chicken. It may seem like you don’t have much sauce, but it’ll get quite liquidy when it cooks.
4. Bake for about 40 minutes until golden brown and sticky. You can turn the chicken pieces over about halfway through cooking and baste with the sauce.
5. Serve with loads of chopped spring onions and coriander.
